Natchez Trace National Park has some good hiking trails. Pinson Mounds has some trails. There's some nice trails over in the Smokey Mountains. All in Tennessee.

Louisiana wouldn't be considered a hiking Mecca but I've heard about a Wildlife Management Area north of Baton Rouge....Tunica Hillls WMA....That is supposed to have some scenic trails....
